From your ham stock you got from boiling your Gammon Joint , you can now make some delicious hearty soup.

Ham Stock

There are lots of ways to make this. You can use tinned peas, frozen peas, or dried peas. I went with dried for this recipe, and, no kidding, it’s the best pea n ham soup I ever tasted.

1. You first soak the peas in water and a bit of bicarb overnight.

You don’t need to add anything else, because I put all that stuff in with the gammon to boil it – onion, carrot, herbs n spices. You don’t even need salt – enough in the gammon.

2. Then comes the magic – cook the peas in the ham stock. Add your chunks of ham and bring to the boil and simmer for about 20 minutes (or whatever your packet of peas recommends)


  • 2 pints of Ham Stock
  • Some chunks of leftover roast ham
  • Packet of dried peas – soak peas overnight in water and bicarb. There are instructions on the packet I bought.
